The strong carbonation is te main feature that all attempts are missing, that is why next attempts will try to improve this. Two routes that might be promising are:

1. Using a keg that is pressurised using a CO2 tank

2. Creating CO2 in the bottles using a baking soda + citric acid reaction
 +

The colour is also too yellow. The original Club-Mate uses E150D (Caramel colour). Future attempts will also include this food colouring.

Ingredients

Test Batch 1A

  1. Hot water (500ml)
  2. Yerba Mate (10g) (Yerba mate CBSé guaraná)
  3. ‘raw’ cane sugar (35g)
  4. vanilla sugar (8g)
  5. 130mg caffeine powder (handle with care!)
  6. Cold water (500ml)
  7. CO2

Test Batch 1B

  1. Hot water (500ml)
  2. Yerba Mate (10g) (Yerba mate CBSé guaraná)
  3. ‘raw’ cane sugar (35g)
  4. 130mg caffeine powder (handle with care!)
  5. citric acid (2g)
  6. Cold water (500ml)
  7. CO2

Test Batch 2

  1. Hot water (500ml)
  2. Yerba Mate (10g) (Yerba mate CBSé guaraná)
  3. ‘raw’ cane sugar (40g)
  4. 100mg caffeine powder (handle with care!)
  5. citric acid (1g)
  6. Cold water (500ml)
  7. CO2

Procedure

  1. Heat 440ml of water to 75*C
  2. Steep Yerba Mate using a steeping bag for 10min
  3. in a seperate pan heat 60ml of water
  4. Add sugar's
  5. Heat until the sugar is fully dissolved
  6. Add the sugar syrup to the tea
  7. Add add the citric acid
  8. Add Cold water
  9. Add caffine
  10. Poor into Keg and pressurize to 2 Bar

Results

Needed more carbonation time sample 1B tasted closest to the original club mate

Test batch 1

Procedure

   1. Heat 440ml water to 75C
   2. Steep 10gr tea for 10 minutes
   3. Dissolve 35gr sugar in 60ml (heated) water
   4. Add the sugar-water to the tea
   5. Add 1gr citric acid
   6. Add 500ml cold water

Results

- Too sour/sweet. - Too yellow.

Test batch 2

Procedure

   1. Heat 440ml water to 75C
   2. Steep 10gr tea for 10 minutes
   3. Dissolve 35gr sugar in 60ml (heated) water
   4. Add the sugar-water to the tea
   5. Add 1gr citric acid
   6. Add 500ml sparkling water

Results

- Not sparkling enough - Slightly too sour - Too yellow.

Test batch 3

Procedure

   1. Heat 340ml water to 75C
   2. Steep 10gr tea for 10 minutes

   5. Add 1gr citric acid
